Who stole my Cookie? #ChefsWithChunkies

“Who stole the cookie from the cookie jar?

Then who?”

Does this ring a bell to any of you’ll?

Yes, as a kid I always grew up on cookies and this was one of our favourite games. I would also run back from school and wait for tea-time so I could sit in front of the TV with my glass of milk and cookies to munch on.
Kids these days have so many more options. From fruity flavours to oats to chocolate chip, the list just goes on..

Britannia’s Good Day Chunkies makes it so much more easier for parents to get a smile on their kids face by giving them a Chunkie in their hand. These crumbly cookies are overloaded with melt in mouth chocolate chips in which each bite takes you to a completely different planet!

So to celebrate the deliciousness of these cookies, here’s a simple recipe that brings about a whole lot of great childhood memories for me. It’s all about flavours and textures on the palate not leaving out the messiness that comes with it.

Chocolate and Tender Coconut complement each other surprisingly well and the crunchiness from the cookies bring out the child in you.

  1. In a small bowl, sift the cocoa powder and powdered sugar.
  2. In another bowl, whisk the egg and gradually add the butter, milk and vanilla extract.
  3. Whisk until it becomes thick for about 5 minutes.
  4. Add the sifted cocoa powder and icing sugar to this.
  5. Gently fold the mixture together until no streaks remain.
  6. Finally, fold in the cookies.
  7. Divide the batter in two small flat bottom containers.
  8. Put them in the microwave until the top is firm to touch and the center is gooey for about a minute.
  9. Dust with icing sugar and serve with tender coconut ice-cream and cookie crumble.
