Chef Riya’s Twist of Taste

I am truly in love with Vikas Khanna. I just admire the way he cooks on national television. He is such a humble chef!

They say the world is your oyster. Well I say, food is mine.

There is so much one can do with it. And he has definitely helped me believe that!

I remember very clearly. It was a Saturday night sometime last year and I was getting too bored. I felt like having pasta but not the boring, classic mac and cheese. (not that I hate it)

When you are independent, your brain tends to be more creative and experiment with everything you have around you.

I have always been inspired by his show “Twist of Taste” and hence I tried recreating the classic Italian Lasagne with Penne and everyone seemed to enjoy it!

I call it:

Two layered Penne in bechamel sauce stuffed with beef mince and topped with fried onions, bacon and cheese

  • 4 cups penne
  • 1 Onion , chopped
  • Celery salt Few sprinkles of
  • Garlic Few sprinkles of Roasted
  • Parmesan Cheddar Sprinkles of and
  • ¼ kg Mince
  • 4 rashers Bacon of
  • 2 Bread slices of
For the sauce:

  • 4 cups penne
  • 1 Onion , chopped
  • Celery salt Few sprinkles of
  • Garlic Few sprinkles of Roasted
  • Parmesan Cheddar Sprinkles of and
  • ¼ kg Mince
  • 4 rashers Bacon of
  • 2 Bread slices of
For the sauce:

  1. Sprinkles of Mixed Herbs
  2. Boil the pasta al dente and keep aside.
  3. Cook the mince separately.
  4. In another pan, fry the bacon till crisp, add the mince, chilli flakes and celery salt. Keep aside.
  5. To make the sauce, add the butter in a pan. Once it melts, add the flour and stir for two minutes. Then add the milk and cheese and stir continuously till it reaches a good consistency. It should not form lumps.
  6. Once it is done, turn off the gas and add the herbs and keep aside.
  7. In another pan, cut up the onion and fry till golden brown.
  8. Now you have to start putting the whole dish together so in a bowl, put one layer of penne then add the sauce and meat mixture and keep following this process. After the last layer is done, sprinkle the remaining cheese all over it and put it in the microwave for 30 seconds till all the cheese melts. You can also put it in the bake oven.
  9. Garnish with the fried onions, buttered toast and coriander.
  10. Voila! It's ready to dig into :D:D
