Cookie-Cake Cups!

Chocolate Fondants have always been an all-time favourite dessert. They are also known as lava cakes and chocolate molten cakes all over the world.

The United States-based chef Jean-Georges Vongerichten claims to have invented molten chocolate cake in New York City in 1987, but the French chef and chocolatier Jacques Torres has disputed that claim, arguing that such a dish already existed in France.

They are often considered as “naughty” foods. Now I get why! 😉

On the first day of this great Indian festival-Diwali, I decided to do a little twist to it.

They are crunchy yet soft and gooey in the centre. My perfect dessert!

Ingredients
  • ½ cup flour (50g) plain (all purpose) , sifted
  • ½ cup sugar (55g) icing (confectioner’s) , sifted
  • ½ cup almond meal (90g) (ground almonds)
  • 2 egg whites
  • 100 g butter , melted
  • ¾ cup Cocoa English Powder

  • ½ cup flour (50g) plain (all purpose) , sifted
  • ½ cup sugar (55g) icing (confectioner’s) , sifted
  • ½ cup almond meal (90g) (ground almonds)
  • 2 egg whites
  • 100 g butter , melted
  • ¾ cup Cocoa English Powder
Instructions
  1. 8 small squares dairy milk chocolate, extra
  2. Preheat oven to a medium-high flame.
  3. Melt the butter in a pan and once it has become hot,add the cocoa powder and mix well to get a good consistency.
  4. Sift the flour, icing sugar and almond meal in a bowl. Add the egg whites and melted chocolate-butter mixture in the bowl and mix well to combine.
  5. Spoon the mixture into the lightly greased muffin moulds.
  6. Divide the extra chocolate squares between the moulds and top with the remaining mixture.
  7. Bake for 30 minutes or until cooked but soft in the middle.
  8. Stand in tins for 10 minutes before turning out.
