Flourless Chocolate Cake

Have I told you guys before that chocolate is my first love? I think as soon as I came out of my Mama’s tummy, a piece of chocolate was stuffed into my mouth because that’s how much I love it.

Over the years, I would slyly enter the hall, go to the cabinet where my mother would think they were safe and grab a bar. Till today, I’m a real chocoholic if that’s what I should be calling myself.

Now when I think chocolate, I love simple cakes. I can’t stand those with too much frosting and fondant. So my all time favourite cake would be this flourless chocolate cake that is absolutely divine.

Rich, light and so appealing to the palate. I could have this at any part of the day or night.

While making this cake, I would suggest to use the best of ingredients you can get your hands on. Don’t be ‘kanjoos’ as they say in Hindi. (Yes, I’ve been learning a lot of these words lately =D) Go all out and use quality stuff because only then you will be pleased with the result.

  1. Preheat oven to 180 degrees Celsius and grease a round baking pan.
  2. In a double boiler, set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth.
  3. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture.
  4. Add eggs and whisk well.
  5. Pour batter into pan and bake in middle of oven 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack 5 minutes and invert onto a serving plate.
