Christmas week is here. I’m back home in another 24 hours. There’s just too much excitement to keep to myself right now!

Christmas is such a beautiful season that’s so jolly and you ought to find happiness all around. So what a better way than to celebrate them with some delicious Guava Cheese!
Recently, I learned to make them from the Aunty I live with here in Mumbai and I had so much fun!
For those of you who are not so familiar with it, Guava Cheese is a popular Goan delicacy that is also known as Perad and Goia-bada in Portuguese. It’s got an overdose of sugar and is a bit on the chewy side that makes it totally addictive!
But I don’t think I really have the patience to do this very often. It’s a bit too tedious.
So, be ready to stand and stir that mixture continuously for over an hour.

Ingredients

- Boil and strain the guavas. After they cook, scoop the seeds out.
- Cut into pieces and put in a mixer. Pour the pulp in a bowl.
- Add the sugar and squeeze in the sour limes. Mix and keep for 20 mins.
- Put the mixture over medium heat and stir with a wooden spoon. Add the colouring.
- When the mixture starts to thicken, add a spoonful of butter little at a time and stir the mixture. Make sure that the mixture doesn't stick to the vessel.
- Pour the mixture on a greased thali (flat pan), spread equally and cool.
- When the mixture hardens, cut into small pieces and serve.
