#MeatlessMondays: When the Bong and Mangy meet…

And #MeatlessMondays continues for me…

I’m actually quite enjoying this but I think that it’s going to be the last week. I may do a few now and then but I love my meat way too much so this is not happening for me anymore.

Apologies to all the veggie souls out there!

Today I was craving for something fattening and delicious. I love anything fried and hoping to burn out those calories in my runs.

I just realized that I’ve never done a recipe with brinjal before on the blog so decided to do my own version of the traditional Bengali Baingan Bhaja or Begun Bhaja.

All you bongs out there, forgive me!

I had a blast playing around with these ingredients and at the end of it all my tummy was very happy. I think that’s what matters the most!

Here’s a simple and quick recipe of Baingan Bhaja with the touches of Mangy flavours.

Why mangy? Because I added a little bit of the traditional mangalorean chilli paste. It goes well any kind of meat or vegetable and can be stored in the refrigerator for months.

For the Batter:
Instructions
  1. A pinch of hing
  2. Wash and cut the brinjals. Put the sliced brinjals in salt water for 20 minutes.
  3. Marinade the brinjal in Meet mirsang. Keep aside for 10 minutes.
To make the batter:
  1. Add the besan,maida, cornflour, chilli powder,haldi and salt in a bowl and mix well.
  2. Take each slice and dip it in the batter. Make sure that it has been coated evenly.
  3. In a shallow pan, heat the oil. Fry the brinjal slices on both sides until crisp and golden brown.
Recipe Notes

Serve as an accompaniment with rice and dal.
