Baked Lemon Cheesecake
A little cheesecake didn’t hurt anyone 😉
crushed digestive biscuits
In a bowl, combine the crushed biscuits and melted butter to a loose paste.
Line the base of a spring form pan with baking paper.
Add the biscuit mix and press down. Chill in freezer for 30 mins until set.
In another bowl, mix the cheese, sugar, lemon zest and juice with a stick blender until smooth.
Slowly add in the eggs and emulsify.
Pour mixture into the pan.
Bake at 150 degrees C for about 40 minutes or until set.
