Saucy Baked Chicken!

A Classic Roast Chicken is a traditional British meal. You will find it on the table at every big occasion. It has always been the perfect food to have on a cold winter day keeping the soul warm.

The wonderful aroma you get from it cannot be compared to anything else.

Inspired by the Great Jamie Oliver, I decided to do my own variation of a classic roast chicken done with chicken pieces instead.

  1. Wash the chicken nicely and trim off the excess fat. Pat the chicken pieces dry with a paper towel. Marinade the chicken with the dressing. Let the chicken pieces sit for around 30 minutes.
  2. Cut the onions and potatoes in rounds. Sprinkle the oregano on top.
  3. Preheat your oven to a medium high flame. Rub olive oil on the bottom of the roasting pan so that the pieces do not stick to it. Start putting all the elements on the tray. First put the onions and potatoes. Then arrange the chicken pieces on top of it in the pan so that all the pieces are skin-side up, and the largest pieces (the breasts) are in the centre of the pan. Don't crowd the pan, allow space between the pieces. Add the bacon on top.
  4. Bake in the oven for 30 minutes at a high flame.This initial high heat will help brown the chicken. Then lower the heat a bit and bake for an additional 10-30 minutes more until the juices run clear (not pink) when poked with a sharp knife. Cook till the chicken is nice and brown.
  5. Remove from oven and transfer the chicken to a serving dish.
