St Patrick’s Day Special

It’s that time of the year when you’d see parades, dancing, good food and everything around you being green in Ireland. But what’s interesting to know is that it’s no more just a festival for the Irish as what used to be a religious feast day for the patron saint of Ireland has now become an international festival that is celebrated all across the globe.

St Patrick’s Day celebrated every year on the 17th of March is an official Christian feast day and hence even though it falls in Lent every year, this is one day all restrictions on eating and drinking are lifted.

So Yayy! =D

Let’s make Saint Patrick proud and here’s my twist to the classic Shamrock sandwiches that are usually eaten on this day. I’ve tried to make it palatable to the Indian taste buds so I hope you enjoy this one!

  1. Keep the slices of bread on a board preferably.
  2. In a small bowl, beat the mayonnaise and mustard until smooth. Then, add in the chopped onions and corned beef. Keep aside
  3. Spread the butter on both sides of the bread.
  4. Take a spoon of the corned beef mixture and spread it on one slice.
  5. Take the next slice of bread and spread the tomato chutney evenly. Put this on top of the first slice of bread.
  6. Next, add the sautéed beans and carrots and put this over the previous slice of bread.
  7. Top with the grated cheese and cover with the other buttered slice of bread.
  8. Heat a non-stick pan. Even though both sides of the bread have already been buttered, use a non-stick pan just to be on the safe side. Place the sandwich on the hot pan and let it fry on medium heat until crisp and golden brown . You can then flip it to make sure that both sides are grilled well.
  9. Cut into two triangles. You can garnish it with more grated cheese and serve hot with potato crisps and a chilled Vodka-Sweet Lime Cocktail
