Strawberry Galette

Strawberries are the world’s best friend. I don’t think this plump red fruit with a beautiful texture can be disliked by anyone. I eagerly wait for December as the markets are brimming with this fruit and the ideas in my head go berserk because there’s so much you can do with it.

This year, I made good use of the season from muffins to tarts and gorgeous looking cakes and now it makes me sad that we’ve almost come to the end of it. Can I wait for another year? NOOOO I don’t want to.

And that’s when Jain Farm Fresh Foods come to the rescue. They don’t sell you fresh strawberries but a lovely frozen pulp that is good enough to keep you happy throughout the year.

When the product was sent over, the first thing I decided to make were these French rustic pies which are perfect to have on a hot summer afternoon. The pulp is a bit too tangy so hence I added sugar. Very simple and gets done in a jiffy.

Strawberry Galette
Jain Farm Fresh have come out with a new product- Strawberry pulp and I loved it. You can never get tired of strawberries and I will eat it everyday if given the chance. I have a created a whole bunch of easy recipes that even someone who never enters the kitchen can try. You can check them out on their website. Here's a French rustic pie oozing with the strawberry pulp. Perfect for a hot summer afternoon!

Instructions
  1. Whisk together the flour, sugar and salt. Blend in the butter.
  2. Continue to mix until the mixture resembles coarse breadcrumbs.
  3. Gradually add the water, little at a time until the dough is combined. Feel free to add more flour if needed.
  4. Divide it into two dough balls. Wrap them in cling film and refrigerate for at least an hour.
  5. Meanwhile in a bowl, add the strawberry puree, sugar and curd. Beat well.Keep in the freezer for about 15 minutes to set.
  6. Preheat the oven to 190 degrees Celsius. Remove the dough out of the fridge and roll out the pastry dough. Place on a greased baking tray so it doesn't stick.
  7. Fold the edges of the dough over the mixture, sealing all the crevices.
  8. Prick the base of the pastry case all over with a fork. Line the centre of the galette with parchment paper and fill with dried pulses or rice.
  9. Bake for about 15 minutes or until the pastry is firm, then remove the beans and lightly brush the galette with the milk wash.
  10. Cook for about 5 more minutes until golden brown.
  11. Once it is cooled, add the strawberry mixture in the centre and serve.
