Thai Beef+Lettuce Salad- For The Healthy Souls

Welcome to a new series on the blog- For the Healthy Souls. It’s the first day of a new week and I’m on a strict high protein-low carb diet starting today for the next two weeks. So hope you are as excited as me to smell, breathe and eat all things healthy.

The other day, I stood on the weighing scale and got the biggest shock of my life because I’ve always managed to balance out my food intake and calorie burnout in the past. It’s just that with my new job and other commitments lately, it has definitely not been easy. So here it goes. ONLY WHOLEOME, HEALTHY FOOD for the next few days! (excluding weekends, of course =P)

Now what you see below is something I created without much thought. I know when you read further and see ‘fried beef’ you’ll freak out, but remember it’s ‘stir-fried in olive oil’

Olive oil is one of the most healthiest forms of oil that can be used in your daily cooking. You can read more about it here.

So without saying anything more, here’s my two ingredient salad that is packed with rich, beautiful flavours.

Instructions
  1. In a small bowl, combine the soy sauce, fish sauce, oyster sauce, sweet chilli sauce, mustard, honey, barbecue sauce, black pepper sauce and chilli flakes. Mix well.
  2. Pour the marinade over the beef. Cover and refrigerate for 20 minutes.
  3. In the meanwhile, heat a non-stick pan and stir-fry the onions in olive oil until they get crisp and golden brown.
  4. Add the beef to the pan and stir-fry for another 15-20 minutes. Remove from heat.
  5. In a bowl, place the lettuce and mint leaves. Top with beef mixture and serve.
