It was a cold, gloomy morning, sometime in the month of December. All I wanted to do was pull the covers and go back to sleep. But I was hungry and remembered that I had a whole bunch of apples lying in the basket. One thing lead to the next. Before I knew it, I had a beautiful, aromatic cake staring at me. There was nothing more left to do but just dig in. YESSS2, I sat in bed and finished (almost) the entire cake. But could you blame me? It was so gooood!
Apples and Cinnamon. Two ingredients you can never go wrong with. In the beginning, I would refuse to eat an apple pie but would end up finishing a whole bowl of crumble. Then, I was too dumb to realize. But it was the cinnamon. I hated the smell itself. And now it’s funny how I love to throw it in practically anything I bake, be it pumpkin, carrots or bananas.
This cake is extremely simple to make and you will not regret baking it because the results are phenomenal. Warm, moist, crunchy (thanks to the bits of apple) and flavourful. Get the ice-cream out because your kids are not going to let you run away after reading this.
A few things to note: You can use any cake pan for this recipe. I only used a bundt pan because it looked way more prettier. Don’t substitute the butter for oil. I love using oil for most of my cakes but it doesn’t give a great texture like butter does for this recipe. And please, please, please use vanilla extract and not that rubbish essence they sell in the stores. I’m going to soon post on how you can make it at home as I’ve been getting a number of emails regarding the same.
