Healthy week has already begun with a bang and I hope you liked the first recipe. I’ve been getting some great responses from my dear friends and family so I’m happy as ever!

Recently, I’ve found so much comfort in baking. It relaxes your mind and body especially after a hard day at work. I find it the best excuse to get into the kitchen to unwind.

Now, if you’ve been following me for a while, you would have noticed how obsessed I am about my desserts. Hence, this strict diet has not been the easiest but I’ve managed to find great alternatives to have my piece of cake.

Whole wheat flour and brown sugar have become my best friends. They are the most healthiest foods in the world that I’ve recently discovered. Rich in dietary fibre, minerals and antioxidants, it keeps you fit as a fiddle. Consume it on a regular basis and you’ll find that it’s the best way to shed off all that fat.

Instructions
  1. Preheat oven to 175 degrees celsius. Line with paper muffin liners.
  2. In a medium bowl, sift together flour, cocoa, sugar, baking powder and salt.
  3. In another bowl, whisk the milk, egg, butter and vanilla.
  4. Add the dry ingredients to this bowl and beat with an electric hand mixer until you get a less-sticky batter.
  5. Fold in the walnuts and stir well.
  6. Fill the muffin cups with a spoonful of the batter.
  7. Bake for 20 minutes or until the toothpick inserted in center comes out clean.
  8. Serve hot
